Survival of FMD virus in the environment is temperature dependent:

At optimal pH (7.2 - 7.6)

Milk

Experiments on survival of FMD virus in milk and milk components from infected cattle have demonstrated that pasteurisation at temperatures between 72ºC and 95ºC for 15-17 seconds fails to sterilise completely. Virus can also survive further heat treatment at 65ºC for 1 hour.

Heating of infected milk to between 100ºC and 138ºC for 2-3 seconds fails to inactivate infection, but no virus can be detected, by animal inoculation, after treatment at 148ºC for 2-3 seconds.
